Traditional Japanese knives have a one-sided blade.
This geometry has several advantages, namely:

- concave descent on one side, which allows you to get a clean and neat cut due to the air pocket formed when cutting the fish.
- only one side needs to be sharpened, which is half the work. Only the burr is removed from the concave side.
However, the asymmetrical structure of the blade is specialized, for use only by the right or left hand.

The design of the knife for a left-handed person is made as a mirror image, where the convex side is on the left and the concave on the right.

The Fuji Cutlery TOUSHU FC-373 Yanagiba knife has asymmetrical descents and is designed for left-handers. The left one is convex, the right one is concave.
