The Kanetsugu SHIUN 6302 lightweight and sharp blade penetrates food with ease, making you want to cut all day long. The blade's Japanese VG-10 steel (Takefu Special Steel Co.) offers excellent edge retention but doesn't require as much maintenance as some Japanese steels.
The polished bevels with a forged Tsuchime pattern are not only decorative but also help the knife cut more easily, reducing sticking.
The Kanetsugu SHIUN 6302 santoku handle is made from natural oak grown in Japan. The handle is given a traditional octagonal shape, then sanded to a smooth surface and coated with a dark varnish to highlight the texture and protect against moisture.
