The Kanetsugu SHIUN 6813 is a bread knife with a 210 mm blade and a serrated edge, designed for cleanly cutting crusty loaves, soft sandwich breads, and confectionery sponge cake. Its 21 cm length and aggressive serrated cutting edge make it especially effective for large and wide loaves.
The Kanetsugu SHIUN 6813 bread knife is made in Seki City, Japan, from VG-10 molybdenum vanadium steel — a durable, low-maintenance alloy known for its excellent corrosion resistance and long-lasting sharpness. The VG-10 cutting core is housed within a forged, three-layer sandvich, decorated with a decorative Tsuchime forging.
The octagonal Japanese oak handle is smoothly sanded and provides a comfortable and secure grip. The wood is lightly charred and then coated with a protective varnish to impart a rich color and highlight its natural grain.
The Kanetsugu SHIUN 6813 knife is not only aesthetically pleasing but also fully functional and durable, often indispensable in its specialized field of application.
