Inspired by the shape of a traditional European chef's knife, the Gyuto Kanetsugu SHIUN 6501 combines the best multi-purpose properties with a familiar blade shape and a Japanese approach to craftsmanship.
If you need one knife for all occasions, this is it.
The optimal blade length of 20 cm is suitable for both home cooking and professional use.
The blade's Japanese VG 10 steel cuts superbly, maintains its edge, and offers excellent corrosion resistance thanks to its 15% chromium content.
The Kanetsugu SHIUN 6501's sheaths are made of soft, corrosion-resistant steel to protect the hard cutting core and are finished with a decorative Tsuchime (meaning "forged") finish, not only for decoration but also to reduce sticking.
The octagonal handle of the Kanetsugu SHIUN 6501 is crafted from Japanese oak, carefully sanded, and coated with a light varnish to protect the wood from moisture.
Overall, the Kanetsugu SHIUN 6501 knife combines significant handcrafting with the use of precision metalworking and woodworking machines, ensuring superior results and adherence to strict quality standards.
