The blades of the Kanetsugu Shiun series knives are crafted from a three-layer composite with a core of proven Japanese VG 10 steel (Takefu Special Steel), hardened to 60-61 HRC.
This steel sharpens reliably to a high sharpness, holds an edge for a long time, and is resistant to chipping when used for its intended purpose—slicing food products on a wooden cutting board.
The blades are crafted in the popular Japanese Tsuchime style, where the upper part of the bevels is adorned with a distinctive forged pattern, giving the knife a unique look and reducing sticking due to hundreds of air pockets and a mirror-like polish.
Kanetsugu Shiun knife handles are octagonal in shape to provide a comfortable palm and a controlled grip, and are crafted from Japanese-grown oak.
