Kanetsugu SHIUN VG-10 3 layers

Shiun is a new addition from Seki Kanetsugu. A series of five noteworthy and durable knives designed for both basic and specialized kitchen tasks.


The blades of the Kanetsugu Shiun series knives are crafted from a three-layer composite with a core of proven Japanese VG 10 steel (Takefu Special Steel), hardened to 60-61 HRC.

This steel sharpens reliably to a high sharpness, holds an edge for a long time, and is resistant to chipping when used for its intended purpose—slicing food products on a wooden cutting board.

The blades are crafted in the popular Japanese Tsuchime style, where the upper part of the bevels is adorned with a distinctive forged pattern, giving the knife a unique look and reducing sticking due to hundreds of air pockets and a mirror-like polish.


Kanetsugu Shiun knife handles are octagonal in shape to provide a comfortable palm and a controlled grip, and are crafted from Japanese-grown oak.

The handles, each hand-lacquered by experienced artisans, are available in several shades.

Ranging from a basic natural finish to dark, grain-accented finishes, this allows for both functionality and aesthetic appeal.


The Kanetsugu Shiun series includes all the classic types of kitchen knife blades, each suited to its intended use.

  1. Petty or utility knife is designed for auxiliary slicing, peeling vegetables, and other minor tasks.
  2. Santoku knife is a versatile medium-sized knife for all kinds of slicing and chopping, such as vegetables, and is also suitable for slicing meat or fillet of fish.
  3. Chef's knife, or gyuto knife, is the most important knife in a well-equipped kitchen, excelling at cutting large portions of raw or cooked foods, delicatessen, vegetables, herbs, and more, especially in large quantities.
  4. Nakiri is a vegetable chopping knife with a thin, rectangular blade with a rounded front corner for a natural glide across the cutting board.
  5. Bread knife with a 21 cm blade is suitable not only for everyday slicing of bread and baked goods, but also as an indispensable pastry knife for preparing sponge cakes and pastry.

The Kanetsugu Shiun series thus includes knives for the most basic tasks, distinguished by an attractive appearance and authentic Japanese aesthetic, embodied in high-quality materials designed for decades of faithful service.


Each product is packed in a labeled cardboard box and a transparent PVC cover for safety during transportation.
