Repair of a knife of Takamura Migaki R2 Gyuto 210 mm. 

 

The company produces excellent cutlery items made of excellent steel. 

There are some flaws with the balance, but overall the products are great. 

This blade is from a series similar to Tojiro High Speed Steel

The high hardness, and the thin cuttting edge, are the hallmarks of these high-class knives. 

The Tojiro models is provide a better weight distribution due to their larger size and weight of the handles. 

Such an instrument requires a respectful use, and a correct assessment of it's purpose. 

In the hands of professionals with experience, powder steel blades do without straightening for months, being used daily. 

Outstanding wear resistance and small thickness, made for aggressive cutting. 

Cutting chicken with breaking bones can be an dangerous for edge. 

In this instance, it led to need a service. 

Should be obvious that cutting with breaking bones is not only able to damage the blade, but it is also unlikely that bone crumbs will not make the dish better. 

 

It had to grind high-quality steel to fix the damages. 

These are years of potential, to remain a cooll cutting, thin knife. 

Looking at a broken blade, the imagination painted a more pessimistic result. 

The correct geometry was fully restored.
